They can also be harvested when they are 1 inch long, but will not have their full spice. Peppers grow from green, then purple, to a deep red. Plants are 12-18 inches tall. Harvest after 60-75 days for fully mature peppers. They are excellent fresh or cooked in dishes to add spice and flavor.
